Global knives are unique because of their edge and the way they are balanced. The most important feature of any knife is its edge, and the Global edge is truly its signature. The majority of the Global knives are sharpened or ground on both sides of the blade like western style knives. However, their edges are ground straight to a point rather than beveled resulting in a dramatically sharper knife which stays sharper longer. The edge is so large and prominent that it is easily seen with the naked eye and extends a quarter inch or more up from the tip of the knife.
To balance their knives, Global uses a hollow handle which is then filled with just the right amount of sand to create the correct balance. Global uses this method rather than using a full tang and a bolster to balance their knives for two reasons. First, it is a far more precise than using a tang and a bolster. Second, Asian knives typically do not have bolsters, since they only serve as a hindrance to cutting and sharpening.
Global knives are made from the finest high carbon stainless steel available for producing professional quality kitchen knives. Yoshikin uses its own proprietary stainless steel which it calls CROMOVA 18 Stainless Steel. This steel is hard enough for Global knives to keep their edge for a long time, but soft enough so that it is not too difficult to sharpen the knives. The CRO in CROMOVA 18 stands for chromium and the 18 is the percentage of chromium in the steel. This high percentage of chromium contributes to Global's good stain resistance.

Buying a great knife shouldn't be difficult, but yet it is. I feel like Goldielocks sometimes. That is not the case with this knife. It is just right. I especially love the handle and the confidence I have in the grip.

My wife and I have been collecting Global blades for about 6 months, researching and purchasing one a month, and this is our fourth (and my favorite). The serrations firmly grip the skin of any fruit or vegetable for paper-thin slices, and the fine-ground tip goes right to the core of a cabbage or can swipe out a potato's eyes like an afterthought. I marvel at the razor edge of our Global 4.25" parer, or our larger chef's knife, but this little serrated beauty is usually the first I reach for. At this price, it's an embarrassment not to add it to your rack.

Perfectly balanced, razor sharp steel, feels like an extension of your hand while you use it. I like the metal handle because it won't wear out from being sanitized with commercial sanitizers.

I usually don't like to use serrated knife as utility knife except for slicing bread because it can be little cumbersome to clean and sharpen. However GS-14 is an exception. It never requires sharpening. The handle is different from my other Global knives. It's ergonomic. It has perfect weight and balance. I am satisfied with my purchase.

I ordered this utility knife as an afterthought while I was looking for a new longer paring knife to match my set. I didn't look at it, or hold it in a store first. I am surprised by how much I like it and how well it fits my hand -beautifully balanced too.

A friend recommended Global knives, and i have been satisfied. It has yet to dull and its great for high speed cutting. Unless another knife truly blows me away, I will continue purchasing Globals.
