This knife's broad blade width makes it suitable for cutting big vegetables. The heel of the knife is square-shaped and convenient for removing stalks and eyes from vegetables.
Global knives are unique because of their edge and the way they are balanced. The most important feature of any knife is its edge, and the Global edge is truly its signature. The majority of the Global knives are sharpened or ground on both sides of the blade like western style knives. However, their edges are ground straight to a point rather than beveled resulting in a dramatically sharper knife which stays sharper longer. The edge is so large and prominent that it is easily seen with the naked eye and extends a quarter inch or more up from the tip of the knife.
To balance their knives, Global uses a hollow handle which is then filled with just the right amount of sand to create the correct balance. Global uses this method rather than using a full tang and a bolster to balance their knives for two reasons. First, it is a far more precise than using a tang and a bolster. Second, Asian knives typically do not have bolsters, since they only serve as a hindrance to cutting and sharpening.
Global knives are made from the finest high carbon stainless steel available for producing professional quality kitchen knives. Yoshikin uses its own proprietary stainless steel which it calls CROMOVA 18 Stainless Steel. This steel is hard enough for Global knives to keep their edge for a long time, but soft enough so that it is not too difficult to sharpen the knives. The CRO in CROMOVA 18 stands for chromium and the 18 is the percentage of chromium in the steel. This high percentage of chromium contributes to Global's good stain resistance.

I've owned multiple good knives and have settled on Global as the best for the money. Seriously, you can shave with this knife. Love my Global knives.

Being the sole cook at a small but high volume restaurant, I find myself moving from my line to my prep station, and always forgetting my Global chef knife. Since the majority of my prep is veg and soup I chose to save the money and try the Global veg knife. Love the added weight, love the length, the easily honed blade and the wide blade that makes everything from chiffonade to rustic chunks a breeze. Already own four other Global knives and see no reason to buy from any other brand.

Great balance, great edge. Worth every penny. I've had Globals for years. They polish up real nicely, even after some pretty excessive use (I'm a chef).

I've owned Henkel and Wustoff and was pleased with them. Much more than pleased with Global. This knife is an addition to my collection. I've been using Global daily for a year and they just now need sharpening.

As of recently my wife & I have converted to the exclusive use of Global knives. We've been impressed with the sleek design & the performance level of each & every knife. The larger vegetable knife makes prepping food simple & continually gives a crisp clean cut. I have absolutely no regrets about purchasing Global knives & the hardest sell was to my wife who is critical of quality & expects a high performance standard. The Global knives have met our expectations & even exceeded them.
